Green beans in tomato sauce are a simple and tasty side dish, a little 'rustic'. They are also good cold (in fact I like more !!!). In this recipe I used the common ones, but I prefer those bitter, called 'S. Anna', or 'strings', because they are fine as long as the strings of your shoes ... and make a nice contrast with the sweetness of the onions and tomato .... Bon appetit!




Ingredients: green beans



onion oil Ages

tomato sauce salt, pepper, water


Peel the beans recidento ends and possibly removing the 'thread'. Wash them thoroughly under running water.
In a saucepan heat a little 'oil and fry just (I avoid all raw and put) a large onion, coarsely chopped blonde, or two smaller ... Add beans, a few spoonfuls of tomato sauce, a little water (poca!), season with salt and pepper. Cook in covered pan until the beans are thoroughly cooked (soft), stirring occasionally. If steam is not enough and you notice that tend to stick during cooking, add a little water and cover again again.
