AH, AH, AH ...... the famous' Burritos of Topolone'.... and those who have not yet heard about?? just go to Charity and from a little prayer and the other sticking winking rolls overflowing with sauce with vegetables .... what for? you say ... eh, well, you must treat yourself spirit ... but the body also ... in the words of some wise!! (Eg: my grandfather ...).
Well, 'Topolone the Burritos' are a recipe vegetarian (eh, eh, given the source ... you had doubts?) From parts of the very popular .... Piedmont! Mmmhmmm .... yeah, yeah, yeah .... just a typical dish of the Langhe !!!..... whatever they think, their origin is not South American, but ... up there!! (NB: Read 'up there' in every sense ... ah, ah!)
Courtesy of Family Maddy-Mario (aka 'Topolone' when he enjoys with his wife hungry for burritos) here comes a plate very nice and .... gu-am-sis-si-mo!!
But the surprises do not end there .... In fact, for the first time in ten years of marriage I was not there in the kitchen ... but ... ta-da-daa-daaaaaa !!!!! here and throw the load from 90 ...... my husband, that is, 'Ivan the Terrible'!!!! so I must have broken boxes Topolonia extolling the praises of that damage to the kitchen for the occasion (first and last in his life) he cooked ... ... HIM!! Thanks
Maddy !!!!! You are a myth: not only were special burritos (miracle # 1), but I could see - with my own eyes! - My husband took all the effort in the kitchen cooking (and this is a miracle number 2. ... with controfiocchi !!!!). Thank you Mario! Make us dream! Skip another wing of your recipe!
- Ingredients: * 1
conf. tortillas (we use the brand name "Uncle Bean," is found in ethnic supermarkets);
Mexican hot sauce * 1 tray (same brand) is not strong;
* 1 can of red Mexican beans (again, same brand);
* 1 / 2 liter tomato sauce;
* 1 teaspoon cumin;
* 2 small zucchini, red pepper * 2 small
;
* 1 medium shallot ;
* extra virgin olive oil to taste
- Procedure:
mince, diced peppers and zucchini.
Peparare a soffrittino using all the chopped shallots: just starts to brown, add the zucchini and, after 5 / 6 minutes, the peppers: Cook together for about 10 min ..
then add throughout the tomato sauce, all content of the Mexican sauce pan, and cumin.
Begin cooking over medium heat.
half cooked, add beans and continue cooking, adding where necessary (ie if the mixture should thicken too much) a little water from time to time.
cooked (the mixture should be creamy: NOT runny nor too thick), fill the center of each tortilla with a bit of preparation (roughly a little spoon every x tortilla), then roll them as a kind of cannoli and "stopped" with a toothpick (otherwise tend to unwind)
at this point, pass them in the preheated oven about x 5 / 6 minutes at 200 ° until tortillas not dark.
DELICIOUS!! Good appetite at all!!
